Swan in the Sky

Emily Doherty, one of the finalists in our Belfast cocktail competition, loves the versatility of Coole Swan and wanted to create a cocktail full of the taste of summer.

Ingredients

50ml Coole Swan
15ml fresh lime juice
40ml coconut milk
Small pinch of black pepper
10ml strawberry sugar syrup
Egg white

Method

1. Mix Coole Swan, lime juice, coconut milk and black pepper in a tall glass
2. Top with strawberry foam
3. How to make strawberry foam: You will need 1 part water, 1 part sugar and 2 parts fresh quartered strawberries. Heat the water and sugar in a saucepan and once the sugar has dissolved add the strawberries. Simmer until the strawberries are mushy and then strain the liquid through a sieve. Refrigerate until the syrup is cold. Beat an egg white until soft peaks have formed and then gently fold in 10ml of the strawberry syrup.
