For the lovers of fruit, our syrupy Coole Swan fruit skewers are an exquisite way to introduce a drizzle of liqueur to your dessert.
- 4 x (10” skewers)
- 125g Brown Sugar
- 70ml Water
- 1 Teaspoon Cinnamon
- 1/2 Orange Juice and Zest
- 2 Nectarines
- 1 Mango
- 8 Strawberries
- 2 Pears
- 1 Pineapple
- 125m Coole Swan
- 125g Caster Sugar
- 1 Tablespoon Butter
- Pinch of Salt
- 50ml Cream
If you are using wooden skewers, soak them in water for at least 30 minutes.
In a small pot combine the brown sugar with water, cinnamon and orange juice and zest. Bring to a boil over medium heat. Remove and set aside to cool to room temperature.
Preheat the grill or barbecue and keep at a low to medium heat.
Thread 2 pieces of each type of fruit onto each skewer. Grill the skewers until the fruit is warm and lightly charred about 6 minutes not forgetting to keep turning the skewers to ensure even cooking. Make sure to brush with the brown sugar syrup after each turn.
While the fruit is grilling, make the dipping sauce. Put the butter, sugar, and salt in a heavy-bottomed pan. Heat on medium, stirring continuously until caramel stage is reached, add the Coole Swan. Put it back on the heat and cook gently to remove any lumps add the remaining cream and cook for a further 5 minutes.
Drizzle the Coole Swan caramel sauce over the grilled skewers. Serve.
TIP : TRY AND CUT ALL THE FRUIT THE SAME SIZE AND THIS WELL ENSURE EVEN COOKING TIME.
