  • 450g/15.8 oz Milk Chocolate, chopped
  • 3 medium eggs, separated
  • 50ml/ 0.105 fl oz Coole Swan
  • 100g/3.5 oz Caster sugar
  • 100ml/1.7 oz double cream
  • 3 limes, zested (to decorate whipped cream)


Melt the Chocolate and cream together in a heat proof bowl over gently simmering water, set aside.

Separate the 3 eggs, whisk the whites until double in size and gradually add the sugar, mix until stiff peak is reached.

Zest the 3 limes and add these, Egg yolks and Coole Swan to the melted Chocolate, mix until combined. The mixture will thicken and become glossy.

Finally fold in the meringue mixture. Combine but do not over-mix.

Pipe this mixture into ramekins or glass and chill for 3 hours.

Serve with whipped cream and some fresh lime zest on top!
