An old Irish favourite with a refreshing touch. Coole Swan isn’t the only contemporary addition to this classic. White chocolate, cinnamon and cranberry all come together and create a delicious experience that’s both familiar and new.
- 400g/14 oz white Chocolate, chopped
- 200g/ 7 oz mini marshmallows
- 60g/ 2 oz pistachios
- 200g/ 7 oz dried cranberries
- 1/2 teaspoon ground cinnamon
Place the chopped white Chocolate in a heat proof bowl and place over a pot of simmering water. TIP Melt this gently if white Chocolate over heats it will go very grainy and thicken.
While this is melting, place the marshmallows, pistachios, dried cranberries and cinnamon in a large bowl and toss together.
When the Chocolate is melted, pour this over the dry ingredients and mix well. At this point you have to work fast as the white Chocolate will begin to set.
Pour the mix into a square baking or bread tin which is lined with cling film. Depending on the size of your tin you may only need to fill half of the tin as you want the rocky road to be 1”-2” thick.
Place in fridge and chill for 2 hours.
When completely chilled remove and cut into chunky squares, its now you will see the beautiful display of colours from all the dried ingredients.
Note, all of the above dried ingredients are optional. The use of, fruits, nuts (optional) and add some different colour to your rocky road!
