COOLE SWAN BANANA AND OATMEAL BISCUIT PUDDING

Serves 4

Ingredients

Oatmeal Biscuits

  • 200g Porridge Oats
  • 200g Self Raising Flour
  • 200g Butter
  • 200g Caster Sugar
  • 1 1/2 tbsp. Golden Syrup

Coole Swan Banana Cream

  • 500g Mascarpone Cheese
  • Dash Vanilla Essence
  • 1 Banana Mashed
  • 200ml Coole Swan

To Decorate 

  • Freshly Sliced Banana

 

Directions

Preheat oven to 180°C / 160°C Fan / Gas 4. Lightly grease and line two baking trays.

Put the butter, sugar and golden syrup into a saucepan over a medium heat and allow to melt, stirring occasionally.

Remove from heat and add the oats and flour.

Mix well together. Drop dessert spoons of mixture onto prepared trays, keeping them about 2 inches apart to allow for spreading. Put trays into oven for 15-20 minutes until lightly golden brown.

Remove from oven and allow to cool.

Coole Swan Banana Cream

In a mixing bowl, blend all the ingredients together and keep cold.

To assemble, break some oatmeal biscuits into your serving glasses and layer with the Coole Swan cream and freshly sliced banana, alternating layers until glass is full.
