Our legacy binds us to our roots and these roots run deep. We are the fifth generation to farm this land. As custodians of this great heritage, we are vested in its past, present, and future.
Folklore has it that the very first grassland in Ireland originated here in the Boyne Valley County Meath. As the story goes, Tailtiu, the Celtic Earth Goddess lived here on the site of our HQ and that she cleared the trees from this land and across the county so it could be tilled, planted, and harvested.
The Folklore story says Tailtiu pushed herself beyond what she was capable of and died of exhaustion. She sacrificed her own life to give life to her people. We like to think we demonstrate the same passion and commitment that Tailtiu showed – maybe not the dying part though, after all who would be left to make our wonderful elixir?
At our family farm, the cows get their energy from a healthy grass-based diet, just as nature intended, with the herd grazing outdoors nearly all year round. Open pastures and fresh clean air ensure that they remain nourished and healthy so they can produce premium quality cream in the most natural way.
Every day we walk our ladies into the milking parlor where they produce the finest quality milk that makes our cream. As fifth generation farmers we know the value of working with nature – the best cream comes from the best grass and happy cows. Great Irish whiskey comes from great grain which is produced by pollinating bees and worm enriched soil. There are no shortcuts. It takes time.
We are already planning for future production of Coole Swan, the world’s number one Premium Irish Cream Liqueur and to do this we will continue to work with nature and enhance our natural environment.
