A celebration of the return of the migrating Swans to Ireland’s shores… This delicious cocktail combines Coole Swan with gin, soda water and a touch of salted caramel. Light, fresh with just a hint of fizz.

 

How to make the Wild Swans' Return

Ingredients

35ml Coole Swan
15ml Dry Gin
50ml sparkling or soda water
1/2 tsp salted caramel syrup
An orange wheel to garnish: fresh or dehydrated

Method

1. Pour all of the ingredients into a rocks glass
2. Fill with large square ice cubes
3. Stir for a full minute
4. Garnish with orange wheel or if you feel like being extra Coole, a fresh lavender sprig
5. Do it your way: Like things a little sweeter? Increase the salted caramel syrup to 1 teaspoon
